The rhythm
How an evening actually unfolds.
Nine courses take roughly three hours. What follows is the shape of them, from the first glass to the last digestif.
5:30pm
Arrival
Aperitif in the lounge. Three snacks from the garden and a choice of cellar wines, taken at whatever pace suits you.
6:15pm
The Prelude
Oyster, cucumber, English sparkling wine. Served standing, while the sea is still the whole idea.
6:45pm
Sea, then Earth
Scallop from Orkney, beetroot baked in salt. Each course announced in one line, then left alone.
8:15pm
Fire and Field
Turbot over embers, then Wagyu with smoked marrow. The two courses the kitchen writes the menu around.
9:30pm
Sweet, then firelight
Velvet No. 14 broken at the table. Petits fours, a digestif, and no pressure whatsoever to leave.
The cellar
Two thousand bottles, one sommelier.
Marcus Adeyemi built the cellar in 2021 and has been adding to it ever since. Roughly one bottle in three has been tasted in the room before it reaches the list.
“I do not remember every bottle. I remember the one that made somebody go quiet mid-sentence.”
